Purpose : To determine the effect of reducing exposure to dietary oxysterols on pancreatic β-cell function and glycemic control among AAs with prediabetes and early diabetes (HbA1c 5.7% - 7.0%).  7-KC will be used as a biomarker of serum oxysterols in this study.

Interventions:

Group A: Standard American Diabetes Association Diet

Group B: Plant-based American Diabetes Association Diet with no oxysterols

Eligibility

Ages Eligible for Study: Adults over 18 years old

Sexes Eligible for Study: Both sexes – women and men

Participants must:

  • Have prediabetes or early diabetes - HbA1c: 5.7% - 7.0%
  • Not be taking medications for diabetes.
  • Not be taking on statin medications to lower cholesterol
  • Be African American.
  • Be able to commit to 12 weeks of participation in the study
  • Be able to store a week’s supply of prepared meals.
  • Be non-smokers
  • Not be on dialysis
  • Have no food allergies or food restrictions
